Comforting Quiche

The warmth of a tasty quiche with the comforting knowledge that there is no fat in it!! Sundried tomatoes, tofu, basil and spinach bring this classic to your oven.

Preheat oven to 350°F.

Lightly oil a 9 inch round cake pan or 10x10 square cake pan.

Ingredients:

  • 1 1/2 cups chickpea flour

  • 1 1/2 cups water

  • 3 oz sun dried tomatoes, soaked

  • 2 cups fresh basil minced

  • 1 block of extra firm tofu, crumbled

  • 11 oz baby spinach, steamed

  • 1 tsp turmeric powder

  • 2 tsp Himalayan pink salt

  • 1/4 tsp asafoetida

  • 1/4 cup nutritional yeast

  • 1 tbsp fresh lemon juice

  • 1/4 tsp black pepper

  • 1/4 tsp baking soda

Instructions:

  1. In a medium bowl combine chickpea flour, turmeric, salt, asafoetida, nutritional yeast, baking soda, pepper, lemon juice and water.

  2. Whisk together until there are no lumps.

  3. Steam baby spinach and set aside.

  4. Crumble up tofu into a separate bowl.

  5. Strain off the spinach and remove excess water by rolling it in paper towels.

  6. Chop up the spinach and soaked sundried tomatoes.

  7. Add them to the batter as well as the crumbled tofu.

  8. Add the fresh basil.

  9. Pour batter into prepared pan.

  10. Bake at 350°F for 25 minutes or until a toothpick inserted comes out clean. The top should be cracked and golden in color.

  11. Allow to cool for 15 minutes before cutting and serving.

  12. Great served with steamed greens or soup!
