Mexican Chocolate Pudding

Chocolate pudding in all its silky glory with this low-fat, plant-based, spicy twist!

Ingredients

  • 1/4 cup corn starch

  • 1/4 cup cocoa or cacao powder

  • 1/4 cup coconut sugar

  • 2 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 1/4 - 1/2 tsp chili powder (more or less is preference)

  • 2 tbsp vanilla extract

  • 2 cups oatmilk

Instructions

  • Place all ingredients in a medium saucepan.

  • Using a whisk, dissolve all powders into the oatmilk.

  • Place burner on medium heat.

  • Whisk often as the mixture heats slowly.

  • When the mixture begins to thicken, reduce the heat to low and whisk more briskly so as not to burn.

  • Stir for 2 minutes then remove from heat.

  • Pour into glass bowl and allow to cool fully before eating.

  • Decorate with fresh berries or cacao nibs and enjoy!
