Rupee’s Red Lentil Soup

Full of colorful vegetables, hearty red lentils, savory tomato broth, and hints of cumin, this warming soup is the perfect winter meal! Pair with our Ashram Biscuits for a fabulous dinner!

Serves: 4

Ingredients:

  • 2 medium carrots, chopped into coins

  • 1 bell pepper, chopped

  • 2 sticks of celery, chopped

  • 1 tsp cumin powder

  • 1 cup crushed tomatoes

  • ⅔ cup red lentils, rinsed

  • 1 liter of water or vegetable stock

  • Salt and pepper, to taste

Instructions:

  1. Place the carrots, bell peppers, and celery in a pot with a splash of water. Saute until vegetables are soft, about 10 to 15 minutes.

  2. Stir in the cumin powder and saute with vegetables until aromatic (about 1 - 2 minutes).

  3. Add crushed tomatoes, red lentils, and water. Bring water to a boil, and then let simmer until lentils are cooked through, about 20 minutes.

  4. Take the soup off of the heat and add salt and pepper to taste. Divide into bowls and enjoy!
