Israeli Couscous Salad

Ingredients

  • 3 cups boiling water

  • 2 cups dry couscous

  • 2 cups pickles chopped

  • 1 cup olives chopped

  • 1 cup cherry tomatoes chopped

  • 1/2 cup celery chopped

  • 1/2 cup shredded carrots

  • 2 tsp salt

  • 2 tsp paprika

Instructions for Couscous

  1. Prepare couscous by boiling 3 cups of water with 2 tsp paprika.

  2. Pour in 2 cups of dry couscous.

  3. Stir in couscous and cover with lid.

  4. Remove from heat.

  5. Allow to sit covered for 5 minutes.

  6. Fluff with fork and allow to cool off before adding the chopped vegetables.

Instructions for salad

  1. Chop all ingredients into bite sized pieces.

  2. Toss all the vegetables with the couscous.

  3. Serve with Balsamic Dressing.
